Had fun helping my daughter paint her nails! I liked the colors she chose!
It’s Thanksgiving night and many are still in a food hangover and I get a text from my wife that is sitting across the room wondering if i could make a EggNog Chocolate chip cake!
I said sure! So here’s that attempt! It turned out quite well, even though I forgot the Sugar! Which I’ll explain a bit later!
This will be made a few more times in our home this season!
1 cup Hazelnut flour or Almond Meal
1 cup Coconut flour
2 tsp Baking powder
1 tsp Baking soda
1 tsp Xanthum gum
1/2 tsp Salt
1/2 tsp Nutmeg
1/4 cup Coconut Oil
1/2 cup soy Egg Nog-I used the Silk Brand
3/4 cup Vegan Chocolate Chips
2 Organic Free Range Eggs

I use it for smoothies, shakes, soups and making almond meal for baking treats. I’ve even started making my own raw food protein bars with my blender!
in my post about Aphthous Ulcers I wrote about research relating gliadin of gluten causing a break down of the junctions between cells in the intestinal wall. Here’s the article on PubMed.
The conclusions are:
Based on our results, we concluded that gliadin activates zonulin signaling irrespective of the genetic expression of autoimmunity, leading to increased intestinal permeability to macromolecules
So eating wheat causes intestinal permeability “Leaky Gut” in all humans.
For many this isn’t an issue at all. For some its a big deal.
I wonder how many that have no issues with wheat and really do?

Serendipity, a pleasant surprise.
Roughly 4 years ago, my wife attended the Anaheim PriMed conference and attended a lecture about Celiac Disease by Dr. Alessio Fasano. After that 1 hour lecture, my wife mentions to me that I probably have celiac disease. 4 months from that lecture I was diagnosed with celiac disease. Fast forward to today 4 years later we are at a conference that Dr Fasano is also giving a lecture. We are at a break grabbing a bite to eat and step up to a stand up table to eat our snack and I look over to my left and notice Dr. Fasano’s name badge. So I ask him how his flight from back east was, etc. I then ask if he remembers giving a lecture about 4 years ago in Anaheim at the PriMed conference, he did!
Serendipity
We chatted for about 15 minutes about the various topics related to Celiac Disease and Gluten Sensitivity. My sense is that his life’s work has led him in directions he never thought he would go.
I’m impressed that his team has been able to discover that humans treat the protein gluten like a bad bug. Most humans are seemingly able to handle this bug through normally working immune systems. And that they don’t know why some immune systems stop being able to take care of it. I appreciate his reasoned approach.
So is the lack of disease, health?
