Gluten Free EggNog Chocolate Chip Cake

It’s Thanksgiving night and many are still in a food hangover and I get a text from my wife that is sitting across the room wondering if i could make a EggNog Chocolate chip cake!

I said sure! So here’s that attempt! It turned out quite well, even though I forgot the Sugar! Which I’ll explain a bit later!

This will be made a few more times in our home this season!

1 cup Hazelnut flour or Almond Meal
1 cup Coconut flour
2 tsp Baking powder
1 tsp Baking soda
1 tsp Xanthum gum
1/2 tsp Salt
1/2 tsp Nutmeg
1/4 cup Coconut Oil
1/2 cup soy Egg Nog-I used the Silk Brand
3/4 cup Vegan Chocolate Chips
2 Organic Free Range Eggs 

 Preheat oven to 350F. Mix all ingredients in a large mixing bowl and then place in a greased ceramic pan. Bake for 1 hour
I accidentally completely forgot to add the 1 cup of sugar I was supposed to add to the recipe! But the 1/2 cup of Egg Nog and Chocolate Chips seemed to make up for it. This is a really good cake with a morning cup of coffee! I think I’ll try making this recipe to make scones. I also liked using the hazelnuts instead of almonds, they add an interesting texture. No reason one couldn’t use almonds. This could also easily be made vegan using either Flax or Chia seeds. 1 TBS of ground seeds to 3 TBS of liquid=1 Large egg
