Lately, I’ve been trying to learn how to bake fun breads that my family can eat… Which means virtually no grain, no dairy and no eggs. So this is a recipe that turned out quite delicious… I’m a bit sad that I didn’t get better photos. My wife is convinced that I could sell this to Starbucks to include as an alternative for those allergic to many things… I did use a cup of sugar, so the glycemic index will be a bit higher, so don’t eat the whole loaf in one sitting! My guess would be that if you had really ripe bananas the bananas alone might offer enough sugar on their own. I know I should try stevia more, but I really haven’t had any luck with it, I can still always taste the after taste. Cane sugar does add some structure to the dough that is tough to replace. Before I started playing around with liquid sweeteners I would make this recipe first so you can see what the texture of the dough is like before baking. Enjoy!
1 cup almond flour
1 cup coconut flour
1 cup brown sugar
2 teaspoons baking powder
1 teaspoon xanthan gum
3/4 teaspoon salt
3/4 teaspoon baking soda
3 bananas mashed
1/2cup walnuts chopped
1/2cup chocolate chips
10 tablespoons soy milk, or almond milk.
1/3 cup coconut oil
2 teaspoons vanilla
