Gluten Free Red Rice and Black Bean burger patties

So last week a good friend gave me a sample of her Veggie burger patties that she made with Red Rice. I had never even seen or heard of Red Rice, so went on the hunt for Red Rice
and found some at Whole Foods. I must say that it does have a ground burger resemblance when cooked up and has great flavor. So I decided to add some black beans and chopped walnuts and see what I could
come up with as my own version. So here’s what I did. 

2 cups of cooked Red Rice- Mine was Lundberg Wehani Red Rice, I have tested other types of red rice but really like the taste and texture of this brand. 
1/3 cup finely chopped onion
1/3 cup finely chopped walnuts
1 can rinsed Organic Black Beans
1/4 cup finely chopped fresh Italian Parsley
1 TBS Cumin adjust to your taste
1/2 tsp Salt to taste
1/2 tsp pepper to taste
1TBS Chipotle Tabasco sauce
2 TBS Egg replacer disolved in water or 1 Large Free Range Egg

Mix all ingredients in a large mixing bowl and take a potato masher and mash it up so that the beans are mostly mashed up this is absolutely necessary if you are choosing the vegan version with the Egg Replacer
as the mashed up beans help hold the patties together. Then in a hot lightly oiled skillet brown each side of the patties. They are sturdy enough for a sandwich and are delicious on their
own.
