This is my Dads birthday cake. He’s not a real big fan of cake, so my Mom made a cake of only ice cream and since I don’t eat dairy this is 3 kinds of Coconut Milk Ice Cream? There are two layers; Strawberry on the bottom and Coffee Chip not the top covered in Chocolate Coconut ice cream. It was delicious.
